Sweet maple, tangy Dijon, and roasted sweet potatoes make this simple sheet-pan chicken dinner feel special without a lot of cleanup.
Prep: 15 minutes · Cook: 30 minutes · Yield: 4 servings
Ingredients
- 1 1/2 pounds boneless skinless chicken breast, cut into 4 even portions
- 2 medium sweet potatoes, cut into 3/4-inch cubes
- 12 ounces fresh green beans, trimmed
- 2 tablespoons extra-virgin olive oil, divided
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon pure maple syrup
- 1 tablespoon lemon juice
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Preheat oven to 425°F. Line a large sheet pan with parchment.
- Toss sweet potato cubes with 1 tablespoon olive oil and half the thyme. Roast for 12 minutes.
- Whisk remaining olive oil with Dijon, maple syrup, lemon juice, garlic, pepper, and remaining thyme.
- Move potatoes to one side of the pan. Add chicken and green beans. Brush chicken with maple Dijon mixture and toss beans lightly in any remaining mixture.
- Roast another 18–25 minutes, until the thickest part of the chicken reaches 165°F and sweet potatoes are tender. If chicken pieces vary in thickness, remove cooked pieces as they finish.
- Rest chicken 5 minutes before serving.
Tips & Storage
For easier timing, pound chicken breasts to even thickness. Cooking time varies by size; always verify 165°F with a thermometer.
